Quality Control

PERSISTENT IN THE WHOLE PRODUCTION PROCESS

In our lab, each coffee lot is classified and  cupped in many stages: after drying, before and after the final processing, and before the shipment. The objective is to give to our customer a consistent product.

The methodology used by our cup tasters/ coffee graders is the one from “Cup of Excellence”, a sensory test that has revolutionized the traditional grading system.

In addition to our own analysis, the lots of specialty coffee (with grades up to 80 points) can be certified by the Brazilian Specialty Coffee Association (BSCA), that have their information available on the website www.bsca.com.br. Certified lots can receive quality seals on their final packaging, enabling the consumer to trace and identify the coffee.

Coffee Cherries Selection

The coffee cherries coming from the field are cleaned by a ventilating and shaking machine. If coming from selective picking, the cherries can go directly to dry on patios.

In water tanks the ripe, green and semi dry cherries are separated by density. It can also be separated by size.

Still in wet process, the cherries can be pulped. The unripe ones with harder pulp are not pulped and the ripe ones with soft pulp are pulped by a pressure system. The pulped ripe cherries result in pulped natural coffee. The mucilage can be removed by biological fermentation in water tanks resulting in fully washed coffee, or in a demucilator machine resulting in semi washed coffee.

Production of quality coffee with certified socio-environmental respect

An effective management system promotes a process of continuous improvement, towards a sustainable agriculture, and meets the requirements for international certifications. In this way we produce a safe a traceable product to the consumers.

Monte Alegre invests in a modern agronomic monitoring system to protect environment. Measures such as recycling water, septic tanks, reforestation, conscious use of energy, integrated management of solid and liquid waste, wastewater usage for irrigation, fertilizer management and vehicle fleet review, among others, are taken.

Over 20% from the farm area are formed by Legal Reserve and Permanent Preservation Areas (APPs) that contribute to the biodiversity conservation, ecosystems and water resources. On social aspects, Monte Alegre has the goal to protect the human well-being and workers’ rights, looking for the improvement of life standard.
